Hello from Maryland! where I am typing this on my iPhone because there’s no Internet in the townhouse. So this will be short.
I’ve spent most of this time baking – I’m actually making two cakes, one a yellow butter cake with a solid dose of white chocolate in it, frosted with a raspberry buttercream made with creme anglaise and Italian meringue as well as a super intense raspberry conserve I made yesterday, and a guava white chocolate ganache. The other is a mango apricot cheesecake with a white chocolate cream cheese frosting flavored with intensely flavored apricot purée.
Everything, needless to say, is from scratch, so it’s taking awhile, but I’m happy to do it. These will be two cakes my mom can be proud of.
