Hello from Maryland! where I am typing this on my iPhone because there’s no Internet in the townhouse. So this will be short.
I’ve spent most of this time baking – I’m actually making two cakes, one a yellow butter cake with a solid dose of white chocolate in it, frosted with a raspberry buttercream made with creme anglaise and Italian meringue as well as a super intense raspberry conserve I made yesterday, and a guava white chocolate ganache. The other is a mango apricot cheesecake with a white chocolate cream cheese frosting flavored with intensely flavored apricot purÃ©e.
Everything, needless to say, is from scratch, so it’s taking awhile, but I’m happy to do it. These will be two cakes my mom can be proud of.
